Earth Day Cupcake Recipe
Happy Earth Day, friends!
We’re calling these our Earth Day cupcakes because I had so much fun making them blue and green with my daughter! Really they are just yummy vanilla cupcakes that call for a little food coloring to give them the earthy effect.
This one is another very simple recipe that’s easy to recreate with your kids. It includes a boxed cake mix and my go-to is Duncan Hines. You can top them with your favorite store bought icing or any buttercream icing. (Sorry, not sharing my recipe on that!)
What You Need:
1 box Duncan Hines Classic White Cake (or similar)
4 eggs
1/3 cup oil
1 cup water
1 3.4oz box of Vanilla instant Jell-O pudding
1 heaping spoonful of sour cream
How To:
1. Preheat oven to 350 degrees. Line cupcake pan with your favorite paper liners and set aside.
2. In a large bowl, whisk together eggs, vegetable oil, water and sour cream until thoroughly combined.
3. Sift in the white cake mix and jell-o. Stir in until just combined. Don’t overmix!
4. Divide batter in half, using Americolor or Chefmaster blue and green to color your batters.
5. Using a small cookie scoop, tablespoon or spoon, drop blue or green (you pick!) into all cupcakes liners (about 1/3 liner full). Repeat with the opposite color. Take a toothpick or knife and do a little swirl.
6. Bake cupcakes for 18-20 minutes or until a toothpick inserted into cupcakes comes out clean. Remove cupcakes from the oven and let cool in the pans for 5 minutes. Take cupcakes out of pan and let them completely cool on wire racks.
7. Top with your favorite store bought icing, homemade buttercream and, of course, SPRINKLES!
