Peanut Brittle Recipe
I’m sharing the recipe for one of my holiday favorites, my stepmom’s peanut brittle!
I love the mix of salty and sweet and it’s perfect to package up to gift to a neighbor. Give it a go and tag me when you make it!
Tip: The true key to a great peanut brittle is to pour it out and stretch it until its thin!
What You Need:
•2 cups sugar (C&H is my fav)
•1 cup Karo light corn syrup
•1 cup water
•1/2 tsp salt
•2 cups raw spanish peanuts
•1 table butter
•1 tsp vanilla
•1/2 tsp baking soda
How To:
•In a medium saucepan combine sugar, corn syrup and water. Cook until sugar dissolves, stirring constantly. Add salt and peanuts. Using a candy thermometer cook to hard-crack 294 degrees, stirring occasionally. Once you reach a hard-crack, add butter, vanilla and baking soda; mix well.
•Pour onto 2 buttered baking sheets. Butter your hands and spatulas and pull and stretch warm peanut brittle to desired thickness. This step is key…the thinner the better in my opinion. When cool, crack into pieces. Enjoy!
