Pumpkin Bread Recipe

You’ve hit the jackpot with this pumpkin bread. This recipe was given to me years ago by our family friend, Lisa, and has been my go-to Pumpkin Bread ever since. It’s really simple to make and perfect for fall!

What You Need:

  • 1 and 1/2 cups sugar

  • 2 eggs

  • 1/2 cup vegetable oil

  • 1 3/4 cups flour

  • 1 tsp baking soda

  • 3/4 tsp salt

  • 1/2 tsp baking powder

  • 1/2 tsp Pumpkin Pie Spice

  • 2 1/2 tbsp water

  • 1 tsp Vanilla

  • 1 (15 oz) can pumpkin

  • 1/2 cups nuts (optional)

How To:

1. Preheat oven to 350 degrees. Lightly grease one loaf pan or four mini loaf pans.

2. In a large mixing bowl, combine sugar, oil, and slightly beaten eggs; beat until smooth. Add water and beat until well blended. Stir in pumpkin, vanilla and pumpkin pie spice.

3. In medium bowl, sift flour, baking soda, and salt.

4. Add dry ingredients to pumpkin mixture and blend just until all ingredients are mixed. Don’t overmix!

5. Bake in preheated oven until toothpick comes out clean, about 50 minutes to 1 hour.
